Minxur
A specialty snack of Jingxing Mining District, made from buckwheat or wheat flour mixed with water to form a paste, scraped into boiling water using a special tool, and served with gravy. It has a chewy texture and is a staple food favored by local miners.
Xianshi
A home-style delicacy in the mining district. Mix flour and water into a paste, add seasonings like eggs, scallions, and salt, then pan-fry into thin pancakes. Crispy outside and soft inside, it can be eaten plain or with mashed garlic.
Mining District Daguocai (Big Pot Dish)
