Mengyin's signature dish, originating in the 1980s, named after its bachelor founder. Made with free-range chickens from Mengshan, stir-fried with local red chili peppers, Sichuan peppercorns, and ginger slices, then slow-stewed with Mengshan spring water. Firm and chewy meat, rich and spicy broth, best enjoyed with corn cakes dipped in the soup — the "synonym" of Mengyin cuisine.
Mengyin specialty snack, using millet flour pancake as base, spreading egg liquid, rolling in leek, tofu, vermicelli and other fillings, "ta" (griddled) on a flat iron pan until golden on both sides. Crispy outside, tender inside, enhanced by the addition of local dried shrimp for extra umami — best enjoyed freshly made at street stalls.
Specialty dish of Daigu Town, Mengyin. Made with free-range black goats from the Daigu mountain area, the whole goat is simmered by parts, paired with lamb offal soup and grilled lamb chops. Tender meat without gamey taste, unique flavor when dipped in garlic paste. Nourishing in winter, the firewood stove stewed whole lamb at Gu Xiang farmhouse restaurants is most distinctive.
