A traditional specialty of Pingjiang County, made from small fish from the branches of Dongting Lake, fire-roasted and smoked. The meat is firm with a unique fragrance. It can be fried or stir-fried, often with green peppers and fermented soybeans. It is a perfect side dish for rice and also a special gift for Pingjiang people to present to relatives and friends.
