Chengde County, subordinate to Chengde City in Hebei Province, is located in the eastern section of the Yanshan Mountains. A traditional famous dish of Chengde County, Gaidao Meat is made by cutting pork into hair-thin slices and stir-frying with bamboo shoots, fungus, etc. It features exquisite knife skills and tender taste, named after the "Gaidao" (knife modification) technique, and is a representative of Qing Dynasty palace cuisine spread to the people.
Poluo Leaf Cakes
A characteristic farmhouse food of Chengde County, Poluo Leaf Cakes are made by wrapping corn flour or glutinous rice flour pastry with wild Poluo leaves, filled with chives and eggs or pork filling. Steamed with the fragrance of leaves, it has a soft and glutinous taste, representing mountain wild flavors.
Donkey Oil Baked Cakes
