A traditional pasta in Qixian, made with flour as the main ingredient, stretched into a spiral shape through multiple processes, and fried until crispy on the outside and soft on the inside. It can be sweet or salty. It is said to have evolved from the court dim sum during the reign of King Zhou of Shang, and is now a common street snack.
Produced in the Taihang terraced fields of Zhouwangdian Village, the millet grains are plump due to the high altitude and sufficient sunlight. The porridge cooked with it is thick and sweet, rich in dietary fiber. There is a local saying: "One meal of millet porridge is better than being an immortal".
