Traditional Shanxi pasta. Datong knife-cut noodles are famous for the skill of "one leaf falls into the pot, one leaf floats, one leaf leaves the blade and another cuts out." The noodles are thick in the middle and thin at the edges, shaped like willow leaves, served with minced meat sauce or tomato egg gravy, chewy and smooth.
Northern Shanxi specialty cuisine, using a copper hotpot with charcoal fire in the middle, old chicken soup as the base. Ingredients are layered: top layer with seafood and delicacies, middle with meat, bottom with vegetables. Cooked while eating, warm and cozy, suitable for winter consumption.
Specialty snack from Hunyuan County, Datong. Made from potato starch, served with special chili oil, vinegar, garlic paste, cucumber shreds and other seasonings. Smooth texture, sour and spicy, an excellent summer refreshment.
